Pankobunny's Chocolate Lava Cake

Chocolate Lava Cake


7 oz dark chocolate, melted
¾ cup + 2 tbsp unsalted butter, melted
4 large eggs
4 large egg yolks
1 cup granulated sugar
½ tsp vanilla extract
1 cup all-purpose flour
½ cup cocoa powder
cooking spray

1. Combine the dark chocolate and butter in a bowl and mix until fully combined. Set aside.
2. In a separate large bowl, beat the eggs, egg yolks and sugar with an electric mixer until they are pale, thick and have increased in volume. Add the vanilla extract and the chocolate mixture from step 1 and continue to mix until fully combined.
3. Add the flour and cocoa powder and gently fold the batter until fully combined.
4. Grease the rice cooker pot with cooking spray and pour the batter into the pot. Smooth the surface.
5. Close the lid and turn the handle to High Pressure Mode. Press MENU and select HIGH PRESSURE STEAM. Set the cooking time to 45 minutes, then press the HIGH P COOK button to start cooking.
6. When the cake is finished baking, immediately invert it onto a large plate. Garnish with fresh raspberries and powdered sugar and enjoy!
