🥩 Ingredients:

  • 2 lb beef top sirloin roast (or top round)
  • 1 Tbsp salt
  • 1 tsp black pepper
  • 1 Tbsp oil
  • 2 Tbsp butter
  • 2 cloves garlic, smashed
  • 2 sprigs fresh thyme
  • 1 cup beef broth
  • 1 Tbsp flour

 

🍽️ Instructions:

  1. Season the beef roast evenly with salt and black pepper. Place in a vacuum-sealed bag (or zip-top using water displacement) with oil, butter, garlic, and thyme. Seal tightly.

    2. Fill the inner pot of the Cuckoo CRP-OHTR0609FW with water to the fill line. Select “Non Pressure Mode → Sous Vide → OK → 55C → Start (Open Cooking)”. 

    3. Submerge the sealed beef in the water bath, ensuring it is fully covered. Cook for 2 hours 30 minutes.

    4. Remove the beef from the bag and pat completely dry. Sear in a very hot skillet for 1–2 minutes per side until a deep crust forms. Rest for 5–10 minutes, then slice.

    5. In the same skillet, add the bag juices and beef broth. Bring to a simmer, whisk in flour, and cook until thickened into a glossy gravy. Spoon over sliced roast beef and serve.
