Arroz Con Pollo
Make rice and chicken, in the same pot, for a flavorful meal that works on a busy weeknight.

Ingredients
- Saffron: 1T
- White wine: 1/2c
- Cubed raw chicken thigh: 2c
- Black pepper: 1T
- Olive oil: 1T
- Chopped onion: 1/4c
- Chopped garlic: 2T
- Diced red bell pepper: 1/2c
- Tomato paste: 1 ½ T
- Short grain rice: 2c
- Low sodium chicken broth: 2 1/2c
- Bay leaf: 1 piece
- Chopped olives: 1/2c
- Peas: 1c
- Cilantro: 1/4c
Directions
- Set cooker to [BROWNING FRY level.#5] and place oil, saffron, pepper, onion, garlic, bell pepper, rice, bay leaf and slightly toast the rice.
- Once toasted add chicken, peas, and olives and set cooker to [RICE] for 50min.
- Once finished place in a bowl and garnish with fresh cilantro and salt to taste. Cheese also works great here!
